Freshly made chai is part of our love story

On the days when we just want to snuggle on the sofa together, we often find ourselves pounding spices and slicing ginger in the kitchen then throwing them into a big pot on the stove. As they start to simmer the fragrant aroma fills every corner of the kitchen with a golden glow, we revel in it and it feels like true love, every time.

I couldn't wait to make this whole-spice ginger chai for you. It's full of my favourite spices. It's tea-free because true love is for everyone, at any time of day! But it also tastes delicious when brewed with our house blend black tea.

In the evenings we often make his and hers versions, mine is without tea for a deeper night's sleep and his is with some of our house blend because who need sleep anyway.

The chai we drink, with a bounty of ginger, cinnamon, golden turmeric, black pepper, cardamom and cloves. This is tea-free so it's perfect as a late-night comfort-drinking wrapped up with a blanket on the sofa.

This brews to a beautifully light crisp golden colour. It can be brewed in a cup for ten minutes or simmered on the stove to extract all the wonderful aromas.

For extra sweetness add a touch of honey.
For softness add a dash of oat milk.
For a richer, more traditional chai add a teaspoon of the house blend black tea and a dash of milk.
